Pastel de Tres Leches Recipe

20 eggs separated
1 C sugar
3 C flour
2 T vanilla extract

LECHE MIX:
3 C milk
1 ½ can sweetened condensed milk
2 cans evaporated milk
3 T vanilla extract

FROSTING:
1 package instant vanilla pudding small
1 15-ounce container whipped topping
1 pound strawberries fresh sliced

Directions:
Directions:
Preheat oven to 350º
Separate egg white from egg yolk. Beat egg whites until stiff peaks form.
Add sugar to egg whites and continue beating
Add yolks to whites and beat.
Mix flour with baking powder and add slowly to the egg mixture blending well as you go.
Add vanilla then mix.
Spray two 11x13 light colored cake pans with non-stick spray. Pour in cake batter.
Bake 350º on bottom shelf for approximately 20 minutes or until knife comes out clean. (Use light colored pans to prevent browning.)
In the meantime, combine ⅓ of the "Leche mixture" ingredients, blend well, and set aside.
Repeat for each of the remaining ⅔ of "Leche" ingredients.
When cake is done, set aside and let cool until it is mostly cooled.
Poke deep into the cakes all over with a fork. Slowly drench the cakes with the leche mixture until entire cake has been saturated. Do not over saturate with milk (you can tell it is over saturated if the milk begins to pool at the sides of the cake.)
Also, do not undersaturate in any spot. The cake should be evenly saturated.
Top with whipped cream and vanilla pudding mixed together. Decorate with your favorite fresh fruit.
