Sweet Potatoes
Pulled Pork (see my recipe for pulled pork);
Cilantro
Feta Cheese or Queso Fresco
Green onions
Bacon
Pickled red onions (if preferred over green onions)
Coleslaw
Garlic cream, cilantro lime or aioli sauce or any other sauce you like to drizzle.

Directions:
Directions:
Preheat oven to 400 degrees.
Wash, rub with olive oil and salt sweet potatoes.
Wrap potatoes in aluminum foil, making sure to wrap around at least twice.
Bake sweet potatoes for 1 hour on a baking sheet lined with parchment paper.

While potatoes are baking, slice bacon into small pieces and fry. Remove bacon from pan and place on a paper towel lined plate.

Chop cilantro and green onions.

Remove potatoes from oven and slice in halves.

Top with pulled pork, bacon, cheese, green onions, coleslaw and cilantro.

Drizzle with favorite sauce.
