Meat from hog head, heart and kidneys (may use pork roast instead)
1 Tbsp. salt
2 bay leaves
3 onions
¼ tsp. whole all spice
3 sticks celery
1 box rolled oats

Directions:
Directions:
Cook meat until done, when cool grind or process till finely chopped, put the meat in roaster, put one small box of rolled oat meal, mix.
Add ¼ tsp. each of ground allspice and pepper, and salt to taste.
Cook in oven, start temp. 250º, cook 2-3 hrs, stir now and then, dipping grease out each time.
If too dry add some of juice from cooking meat.
When done put in pan and mash down so that it may become solid and and can be cut.
May slice and pan fry or serve cold.
