Peach Layer:
8 Peaches-Peeled, pitted and sliced
1 tsp. Lemon Juice
1/4 C. granulated Sugar
1/4 C. Brown Sugar
1/8 tsp. ground Cinnamon
2 Tbsp. Corn Starch

Cobbler Layer:
1 C. Flour
1/4 C. granulated Sugar
1/4 C. Brown Sugar
1 tsp. Baking Powder
1/2 tsp. Salt (delete if you use salted Butter)
6 Tbsp. unsalted Butter, chilled and cut into small pieces
1/4 C. Boiling Water

Topping:
3 Tbsp. Sugar
1/2 tsp. ground Cinnamon

Preheat oven to 400º

Peach Layer:
Sprinkle the prepared peach slices with lemon juice, set aside. In a bowl, mix sugar, brown sugar cinnamon and cornstarch together. Add in peaches and toss to coat with sugar mixture. Place in a lightly greased 9" x 13" baking pan. Bake for 10 minutes.

Cobbler Mixture:
While peaches are baking, Combine all dry cobbler ingredients together. Cut in butter with two knives or a Pastry Blender. Stir in the boiling water, just until blended. When peaches are done baking, remove from the oven and drop the cobbler mixture over the peaches using a spoon.

Topping:
In a small bowl or cup, combine sugar and Cinnamon. Sprinkle this over the cobbler mixture. Return to the oven and bake the cobbler and topping mixture for 20 minutes.

This is an excellent cobbler recipe to use with fresh peaches when they are in season. I received this recipe from Nancy at the CentraCare Paynesville Clinic. Serve with Whipped Cream or Ice Cream.
