2-3 very ripe Bananas
1 C. Whole Milk
1 C. Whipping Cream (not whipped)
1/2 C. granulated Sugar
3 T. Cornstarch
Dash Salt
3 Egg Yolks
1 tsp. Vanilla Extract

Directions:
Peel bananas and cut in 1/3. Place bananas, milk and whipping cream in a saucepan. Heat over medium-high heat until hot, but not boiling. Roughly mash the bananas in the milk mixture.

In a bowl, combine sugar, cornstarch and salt. Mix together. When the milk mixture is almost boiling, add the sugar mixture and mix well.

In a 1-cup dish, lightly beat the egg yolks together. Place ~ 1/2 C. of the milk mixture into the eggs to temper them (so the egg yolks do not scramble). Quickly stir this together and return this mixture to the saucepan. Stir well to incorporate.

Bring the pudding mixture to a boil and boil for 1-2 minutes, stirring frequently. Remove from heat and add vanilla extract, stir well.

Pour pudding into 4-dishes (~3/4 C. per dish) OR into a 3-C. bowl. Cover with plastic wrap and chill for an hour. If desired, pudding can also be eaten warm.

This is a banana pudding recipe which does not use Vanilla Wafers. It seems the majority of banana pudding recipes call for vanilla wafers and Instant Pudding Mix. This is truly a homemade pudding. This can also be used as a Banana Pie filling. The egg whites can made into a meringue to top the pudding or the pie, if desired.
