6 c. Peaches diced
4 Tomatoes
1 1/4 Red Onion
1 Red Pepper chopped
1/2 c. Cilantro
1/2 c. White Vinegar
1 t. Lime Juice
2 T. Honey
1/2 t. Cayenne
3 cloves of Garlic
2 T. Cumin
Directions:

Combine all ingredients. Boil and then simmer for 5 minutes.
Add to jars. Boiling bath for 10 minutes or 20 at my altitude.
