1 package vermicelli rice noodles
1 bag boneless skinless chicken breast
1 red bell pepper
2 tsp. minced garlic
1 onion
2 bags shredded cabbage
1 bag shredded carrots
6 green onions
3-4 stalks celery
3 tsp. black pepper
4-5 beef bouillon cubes
soy sauce
save 3-4 cups of the water the chicken is boiled in.

Directions:
Boil the chicken breasts until cooked. When done shred chicken. Soak rice noodles in cold water, set aside. Oil a skillet, saute garlic and onions until brown, then add diced red peppers and diced celery.
After celery and peppers are brown add shredded chicken, cabbage, pepper, bouillon cubes, and soy sauce to taste, add 3-4 cups chicken broth, carrots and rice noodles.
Cook on low for around 20 min. or until bouillon is dissolved.
Serve in 9x13 pan. Garnish with green onions and a sliced boiled egg (optional).
