½ cup unsweetened applesauce
½ cup organic evaporated cane juice crystals
1 lg. egg
1 Tbsp. vanilla
1 Tbsp. honey
1 Tbsp. olive oil
1 cup whole wheat flour sifted
1½ cup rolled oats
½ tsp. baking powder
½ tsp. baking soda
½ tsp. salt
1 Tbsp. cinnamon
2 cups chocolate chips

Directions:

Preheat oven to 350º.
Combine applesauce and cane juice crystals. Mix until smooth.
Add egg, vanilla, honey and olive oil. Mix well.
Mix the whole wheat flour, rolled oats, baking powder, baking soda, salt and cinnamon.
Slowly add the oat mixture to the applesauce mixture and mix just until combined.
Add chocolate chips and blend.
Drop tsp. of cookie dough onto parchment paper-lined baking sheet, leaving at least 2-inches between cookies.
Bake 12-15 min. Let cool.
Store in airtight container.
