For the chicken:

1 whole chicken, cut up
2-3 cups of all-purpose flour
1 tsp smoked paprika
Salt & pepper to taste
1-2 cups of buttermilk
Canola oil for frying

For the dipping sauce:
cup honey
1 tsp hot sauce (Tabasco or Frank's)
tsp red pepper flakes

Salt the outside of the chicken liberally and place into a ziplock bag. Pour the buttermilk over the chicken and marinate in the fridge for 8 hours or overnight.

Remove the chicken and pat dry, reserving the buttermilk in a bowl. Mix the flour, smoked paprika, and salt & pepper in another bowl. Dredge the chicken in the flour, then in the buttermilk, and back into the flour one more time. The coating should appear shaggy like Popeye's chicken.

Heat oil to 325F in a large deep pot. Fry chicken in batches, and do not overcrowd the pan. Fry until chicken reaches an internal temperature of 165F (should take about 14 minutes for smaller pieces, but up to 17 minutes for large pieces like whole breasts. Remove the finished chicken to a wire rack to drain so that they do not get soggy.

In a separate bowl, mix together the honey, hot sauce, and pepper flakes. Spoon over chicken and serve warm.
