2 eggs whisked
1 tablespoon olive oil for stir-frying
Shrimp cleaned, deveined, tails removed... 4-6 per person
Green onions sliced
2 Cups cooked Rice - leftover or take out
Green peas - fresh or frozen
Shiitake mushrooms - fresh or dry (soak in water if dry one is used)
Chinese Sausage or Chinese BBQ pork cut into small cubes
Soy Sauce
Chicken broth (optional)

Directions:
Directions:
Stir-fry the egg. take it out of pan and put into a bowl
Stir-fry the shrimp and take them out and put in the egg bowl
Stir-fry the rice with green onions and mushrooms
Add some Soy Sauce for taste
Add green peas and Chinese sausage or BBQ pork
Put eggs and shrimp back into the pan and heat through.
Chicken broth is optional. Add a bit if the rice is too dry.
Cover the rice if broth is added.

Use Olive Oil sparingly in your wok or frying pan.

Renfens Stir-Fry Rice is a Big Favorite in our office. She is always willing to make it for us whenever we ask, especially when we have left over rice from another dish. We all say "Oh goodie, now Renfen can make Stir-Fry." and she will. I know she likes to cook for us because you can always hear her humming when she cooks.
