3/4 cup (1 1/2 sticks) butter or margarine, softened
1/2 cup sugar
1/2 cup packed brown sugar
2 eggs
1 cup flour
1 teaspoon baking soda
2 1/2 cups rolled quick oats
2 cups (12 oz.) package white chips
1 cup chopped dried apricots

Directions:
Directions:
Beat butter and sugars until fluffy. Add eggs, beat well. Add flour and baking soda, beat until well blended. Stir in oats, chips, and apricots. Loosely form rounded teaspoons of dough into balls, place on ungreased cookie sheet. Bake 370º for 7-9 minutes or just until lightly browned. Do not overbake. Cool 1-2 minutes then remove to wire rack.
