6 eggs
1½ c. milk
1 c. flour
Salt and pepper
2 T. bacon grease, lard, or cooking oil

Directions:
Directions:
1. Beat eggs and milk.
2. Add flour, salt and pepper; mix thoroughly.
3. Place bacon grease, lard or oil in large skillet and heat on medium high.
4. Pour batter in and fry, turning it over and over like scrambled eggs until it becomes dry and brown. Add more bacon grease as needed.

Francie served her brood of kids schmada with pork-n-beans, usually with fried fish that Frank caught during the summer. The freezer always had enough fish to last the entire winter.
Others like it with syrup. And – watermelon seemed to show up often as a side.
