½ c. shortening
2½ c. flour
1 1/3 c.sugar
3 tsp. baking power
½ tsp. salt
¼ c. Maraschino cherry juice
16 Maraschino cherries, chopped fine
½ c. milk
3 drops almond extract
4 unbeaten egg whites
½ c. chopped nuts

Directions:

1. Preheat oven to 350°. Grease and flour 2 8-inch round pans.
2. Stir shortening to soften.
3. Sift dry ingredients over the shortening.
4. Add cherry juice, milk and extract.
5. Mix until flour is dampened.
6. Beat for 2 minutes.
7. Add egg whites and beat for another 2 minutes.
8. Fold in nuts.
9. Pour batter into prepared pans.
10. Bake 35 minutes until toothpick inserted in middle comes out clean.
11. Cool before frosting.
 

Icing That Never Fails

1 c. sugar
1 c. boiling water
½ tsp. cream of tartar
1 tsp. cherry syrup
White of 1 egg
4 diced marshmallows

1. Stir sugar, water and cream of tartar thoroughly.
2. Bring to a boil and let boil rapidly for 6 minutes.
3. Slowly add this syrupy mixture to beaten egg white and marshmallows.
4. Add cherry syrup and beat 5 minutes.
