1½ c. oil
4 eggs
3 c. sugar
2 c. grated carrots
1 small can crushed pineapple, drained, reserve liquid
1 c. chopped nuts
2½ c. sifted flour
2 tsp. cinnamon

1 tsp. baking soda
½ tsp. salt

Icing:
2 tsp. vanilla
¾ box powder sugar
1 8 oz. pkg. cream cheese
¾ stick butter
pineapple juice

Directions:
Directions:
1. Preheat oven to 350°.
2. Grease and flour 13x9x2 inch baking pan.
3. Cream oil, sugar and eggs.
4. Mix in carrots, pineapple and nuts.
5. Add flour, soda, cinnamon and salt.
6. Beat at medium speed, scrapping sides and bottom of the bowl, until well blended.
7. Pour batter into prepared pan.
8. Bake 45 minutes until toothpick inserted in middle comes out clean.
9. Cool before frosting.

Make frosting:
1. Blend all ingredients, gradually adding enough juice for a smooth consistency.
2. Spread over cooled cake.
