2 tablespoons butter
2 tablespoons finely chopped onion
½ teaspoon minced garlic (optional)
1 cup converted rice
1½ cups chicken broth or water
3 parsley sprigs or 1 tablespoon dried parsley
1 sprig fresh thyme or ¼ teaspoon dried thyme
1 bay leaf (must be removed before serving)
Salt and pepper to taste

Melt 1 tablespoon butter in a saucepan. Add onion and garlic. Cook, stirring until wilted. Add rice and stir briefly over low heat until grains are coated with butter. Stir in the broth. Stir so there are no lumps of rice. Add parsley, thyme and bay leaf. Bring to a boil. Cover with a tight cover. Turn heat down and simmer for 17 minutes. Remove cover and discard bay leaf and fresh parsley and thyme sprigs (if used). Using a fork, stir in remaining butter.
