GUACAMOLE STUFFED CHICKEN Recipe

Ingredients: 2 Bonelss and skinless chicken breasts 1/2 C Wholly Guacamole (or other brand). 2/3 C shredded Cheddar Cheese 1 C Panko Bread Crumbs 1/2 tsp Adobo seasoning Veggie Oil

Directions: |
Directions:1. Heat a large skillet over medium heat. Add oil to about 1/2" from the bottom of skillet.
2. Butterfly chicken breasts, cutting all the way through, lie flat on cutting board.
3. Season with Salt and Pepper.
4. Place 2 TBS guacamole on top of each chicken breast. Spread evenly with back of spoon or spatula.
5. Sprinkle 1/4 cheese onto each breast.
6. Carefully fold the chicken in half, until ends meet. Secure with toothpick or twine string.
7. In a wide bowl, mix together Panko and Adobo seasoning.
8. Press each side of chicken into seasoned bread crumbs, place on parchment lined baking sheet and set in freezer for about 20-mins.
9. Remove chicken from freezer and carefully place into hot oil, cooking on each side for 3 - 4 mins per side until cooked through and well browned. NOTE: do not crowd pan. If needed, cook 2 then remove and cook remaining 2 breasts.
10. Remove to paper towel lined plate. Serve with a salad, rice or your favorite side.
