Bob's French Onion Soup Recipe

4 T. butter
6-10 yellow onions, thinly sliced
1 tsp. sugar
3 T. flour
4 cans beef broth
7 c. water with 5 beef bouillon cubes
2 c. cooking sherry or red cooking wine
1 garlic clove
salt and pepper to taste
1 c. Swiss cheese
½ c. Parmesan cheese, grated
French bread

Directions:
Directions:
1. Heat butter in large heavy frying pan and add the onions.
2. Simmer over low heat 10 minutes until the onions are soft.
3. Increase the heat and brown the onions lightly.
4. Add sugar and stir constantly until the sugar is caramelized and given a rich color to the onions.
5. Stir in the flour and cook 1 minutes.
6. Add garlic and one cup beef broth and transfer to a soup kettle.
7. Add the remaining broth, bouillon and wine.
8. Simmer uncovered for 40 minutes until the broth has reduced slightly.
9. Season with salt and pepper.

To Serve: float a piece of toasted French bread on top of the soup in a bowl. Top with Swiss and Parmesan cheeses and place under preheated broiler until cheese is melted.
