Banana White Chocolate Bread Pudding Recipe

3 TB unsalted butter
2 pounds (about 6) bananas, peeled & cut into 1/2 inch rounds ( about 5 cups)
2 tsp plus 1 1/2 cup sugar
1 tsp ground cinnamon

4 1/2 cups whipping cream
1 vanilla bean, split lengthwise
6 large eggs

12 - 1/2 inch slices of challah or other egg bread, cut in half diagonally

9 oz of good quality white chocolate(Baker or Lindt) chopped

Butter a 13 x 9 x2 glass baking dish

Melt butter in a heavy skillet over medium high heat. Add bananas & sprinkle with sugar & cinnamon. Saute bananas until golden & very soft - about 2 minutes. Remove from heat & mash bananas with a fork

Pour cream into another saucepan & add scraped vanilla. Bring to simmer. Remove any remnants of vanilla bean & discard
Whisk egg & remaining (1 1/2 c) sugar in a large mixing bowl. Gradually & carefully whisk hot mix into egg mixture. Stir in mashed banana mixture.

Arrange bread triangles onto baking dish, overlapping slightly. Sprinkle with half of chopped chocolate.

Pour half of the custard over without disturbing the bread. Repeat another layer of bread, chocolate & custard. Let stand 1 hour, pressing on bread to submerge occasionally.

Preheat oven to350º

Bake until puffed, brown & tester comes out clean, about 40 minutes.

Serve warm
