Grandma's Lemon Pie Recipe

baked pie shell
6 lemons (juice all 6 & rind/zest atleast 2)
2 1/4 cups sugar
3 TB butter
3 3/4 cups warm water
6 TB cornstarch
9 egg yolks
3 pinches of salt

3 egg whites

Directions:
Directions:
Combine all ingredients but the egg whites in a saucepan or double boiler & heat, stirring, until thickened.
Pour into a cooled pie shell ( cover with waxed paper to keep skin from forming)
Whip egg whites until they form stiff peaks then spread decoratively on top of cooled filling covering to all edges. -
CAREFULLY broil for 1 or 2 minutes to a golden brown color
