2 cups of grated carrots
2 cups of sugar
4 eggs
1 1/4 to 1 1/2 cups peanut or other oil
3 cups flour
1 tsp EACH of baking powder, baking soda & salt
1 tsp cinnamon
1/2 cup chopped nuts &/or raisins

Directions:
Directions:
Preheat oven to 375º

Grate carrots in electric mixer bowl.
Add sugar, eggs, & oil & mix well
Mix all dry ingredients together, then stir into creamed mixer
Stir in nuts & raisins, if using

Pour into an UNGREASED tube or Bundt pan & bake for 1 hour
