1 cup Bisquick
3 cups thinly sliced fresh zucchini
1/2 cup grated Parmesan cheese
1/2 cup minced onion
1 clove of garlic, minced
1/2 tsp oregano
1/2 tsp salt
1/2 tsp cayenne pepper
2 TB fresh minced parsley
4 eggs, slightly beaten
1/2 cup oil

Preheat oven to 350º

Mix all ingredients together & pour into a greased 13 x 9 baking pan or 10" pie plate

Bake for 25-30 minutes or until lightly browned

Cut into squares or slices after fully cooled
