4 T. olive oil divided
1 12-oz corn beef seasoned with salt and pepper
10 large eggs
2 cups shredded mozzarella cheese, divided
½ cup heavy cream
3 slices onions, chopped to small pieces
dash of ground ginger and Italian seasoning
Optional ingredients - veggies to the mix

Directions:

Preheat oven to 375⁰ and add 1 tablespoon olive oil to a 9-inch cast iron or oven-safe skillet. Swirl around to coat the pan evenly. Add the corn beef. Add salt and pepper to the corn beef (like a rub, making sure to get all sides). Evenly drizzle the corn beef with about 3 tablespoons olive oil and bake for approximately 45 minutes or until lightly golden brown. While the corn beef is baking, in a large bowl add the eggs and whisk to break them up. Add 1 ½ cup cheese, heavy cream, onions, Italian seasoning, ground ginger and whisk to combine. Pour the egg mixture over the corn beef. Evenly sprinkle the remaining ½ cup cheese. Return skillet to the oven, and bake for about 30-35 minutes, or until eggs are set and cheese is a golden brown.

The quiche rises slightly during baking. Allow quiche to cool for about 5 minutes before slicing and serving. Will keep in an airtight container for up to 5 days, refrigerated.
