1 box of Macaroni and Cheese (Brand of choice)
1 can of tuna, drained
Optional: 1/4 cup of each: onions, celery, and/or tomatoes.

Prepare Macaroni and cheese per directions. Once you mix the milk, cheese and butter, then add tuna and optional vegetables of your choice. Options: tomatoes, corn, celery, onions, peppers, and maybe some beans.

This has been tweaked a couple of times – we now use Publix® or Cracker Barrel® Macaroni & Cheese and I have moved to Yellowfin Tuna instead of Albacore. It still works in a pinch and covers your food groups.

When David and I were first married, we were so poor that we had to learn how to maintain a menu on a shoestring. We made $50 too much to qualify for foodstamps. So we learned to rotate Macaroni/Cheese with canned tuna, hot dogs and spaghetti has our main staples. Living on a tight budget can be done, and it will build character. Check out some of the frugal websites for cutting food costs. Some are reasonably easy, others require working a lot from scratch and that can be time consuming. But when most of your budget goes for diapers and formula, every little penny counts!
