5 Tbsp. cornstarch
1¼ cup sugar
1½ cup water
½ cup lemon juice
1 Tbsp. lemon zest
3 large egg yolks
3 Tbsp. butter

Meringue
3 egg whites
5 Tbsp. sugar

Directions:
Directions:
Whisk cornstarch with sugar, and water.
Bring to boil. Add lemon juice, lemon zest and egg yolks. Continue cooking on medium heat stirring until thickens (about 10 min).
Remove from heat whisk in butter and pour into baked pie crust.
For meringue - beat egg whites to soft peaks. Add 5 Tbsp. sugar in slow steady stream. Continue beating until whites are glossy and firm.
spread over filling touching crust.
bake till lightly brown.
