6 C chopped fresh apricots, including 1 C soaked dried apricots
7 C sugar
1t. Salt
1 t. Vanilla
1 T Butter

Directions:
Directions:
Seed and chop fruit. Soak dried apricots in boiling water for 20 minutes. Sprinkle fruit with vanilla, salt & lemon juice. Toss.
Add the fruit to the pot. Add sugar to the fruit. Stir and mash fruit together with the sugar. Cook over high heat, stirring constantly, until mixture comes to a rolling boil that will not stir down. Add liquid pectin and boil for one minute. Turn off heat. Add butter. Skim off foam. Pour into prepared jelly jars. Boil in canner for 5 full minutes. Remove from canner and tighten lids again, place on a fresh tea towel and do not disturb for 24 hours.

Makes 9 - 8 oz jars
