25 ginger snap cookies - crushed
2 tbsp. sugar
5 tbsp. butter
1 cup white chocolate bits
1 cup pecans - chopped
1/4 cup shredded coconut (you can use sweetened or unsweetened) I prefer un as these are sweet
1/4 cup toffee bits
1 can sweetened condensed milk
1/4 cup pumpkin puree NOT pie filling
1/2 tsp pumpkin pie spice

Preheat oven to 350º.
Place can of sweetened condensed milk in a bowl of hot water (unopened).

Place butter in a 9x11x2" pan and put in the oven to melt. Stir the cookie crumbs and sugar together. Evenly put on the melted butter. Press down with rubber spatula.

Mix pumpkin and condensed milk together, pour evenly over crust. Sprinkle this with white bits, pecans, toffee bits and coconut.

Bake for 30 to 40 minutes until edges have started to brown. Cool completely.

I love these bars because you can do whatever you want with them. If you don't like white chocolate use chocolate. If you don't like coconut you could try using oats (just thought of that and now I have to try it!!)
