Black Bean Soup Recipe

1 pound black beans
10 cups of water
2 large green peppers, chopped
2/3 cup olive oil
1 large onion, chopped
4 garlic cloves,minced
4 tsp salt
1/2 tsp pepper
1/4 tsp oregano
1 bay leaf
2 TB sugar
2 TB vinegar
2 TB cooking wine
2 TB olive oil

Directions:
Directions:
Wash (& sort thru) beans & soak with one green pepper overnight
Cook in same water for 45 minutes
In a skillet with olive oil, saute onions, garlic, & peppers until soft but not browned
Take approximately one cup of beans out of water they were boiled in, drain & spoon into onion/pepper mixture. Flatten the beans with a fork & mix well
Add bean/onion mixture to pan of beans adding salt, pepper, oregano, bay leaf & sugar
Cook, covered, on low heat for about an hour until well thickened. Cook longer until thickened to taste.
Just before serving, add 2 TB olive oil

Beans can be briskly boiled for 2 minutes & then turn off heat & cover for an hour
This replaces the overnight soaking - overnight soaking in hot weather can make the beans sour
