Ingredients: 6 large red or green bell peppers 1 1/2 cups rice 2 pounds ground beef 1/2 sweet onion - diced 2 cloves garlic - finely chopped 1 (14 oz) can diced tomatoes - undrained 1 (10 oz) can diced tomatoes with chilies 1 pound sharp cheddar cheese - shredded 1/2 tsp salt

Directions:Preheat oven to 400º Cook rice according to directions. (2.5 cups rice to 5 cups water) Cut the tops of the peppers off and clean out seeds and rib. Set aside . Add 2 tbsp. butter to a skillet and fry the onions until they are translucent. Add the garlic and cook for 2 minutes or until garlic is fragrant. Add the ground beef and brown. If needed drain as much grease out as you can. Set aside.In a medium saucepan bring the tomatoes to a boil. Cool slightly. In a large bowl combine rice, beef and tomatoes together mixing well.
Place the peppers open side up in a 9x13x2" pan, divide the mixture evenly among the peppers. Cover with foil and bake for 40 minutes. Uncover, sprinkle with cheese, place back in oven and bake for another 5 minutes or until the cheese is melted. |

Notes: I discovered that if you put the peppers in a muffin tin there is no chance of the peppers falling over. You can also use a popover pan!
You can use any ground meat you wish, just remember if it is a very lean meat you may need more than a pound.
