Ingredients:  
Ingredients:  
1 3/4 cups(40) crushed Ritz or saltine crackers
2 cups cooked rice
3 pounds ground beef
1 large onion, chopped
1 1/2 cups tomato juice
3/4 cup water
3 TB taco seasoning
salt & pepper to taste
3 diced tomatoes
4 cups shredded lettace (optional)

1/2 cup butter, cubed
1/2 cup flour
4 cups milk
1 pound Velveeta
3 cups shredded cheddar cheese
1 jar olives

Tortilla chips

Directions:
Directions:
Place crackers into a 13 X 9 baking dish
Cover crackers with rice
Cook beef & onions until tender & browned, then drain
Stir in tomato juice then spoon over rice
Top with tomatoes

In a saucepan, melt butter
Stir in flour then milk
Bring to a boil & cook, stirring constantly for 2 minutes
Reduce heat & stir in Velveeta
Pour over tomatoes
Top with cheddar cheese & olives

Bake until bubbly

Just before serving, top with shredded lettace, if desired.
Serve with tortilla chips
