1/2 cup all purpose flour
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon Cajun seasoning
1 teaspoon pepper
5 boneless skinless chicken thighs
3 tablespoons olive oil, divided
2 medium carrots, chopped
1 small onion, chopped
1/2 cup chopped green pepper
2 garlic cloves, minced
1/2 cup white wine or chicken broth
One can condensed cream of chicken soup, undiluted
1/2 cup of chicken broth
Hot cooked rice

In a large Resealable plastic bag, combine the flour, salt, garlic powder, Cajun seasoning and pepper. Add the chicken thighs, one at a time, and shake to coat. In a large skillet, brown chicken in 2 tablespoons of oil in batches. Remove chicken and keep warm. In the same skillet, sauté carrots, onion and green pepper in remaining oil until tender. Add garlic, cook one minute. Add wine, stirring to loosen browned bits from pan. Stir in soup and broth. Return chicken in the skillet Bring to a boil. Reduce heat, cover and simmer for 10 to 15 minutes or until a thermometer reads 165°F. Serve with rice.
