12 ears roasted corn
1 (16 oz) stick cream cheese - softened
1 stick butter
1/2 cup heavy cream
1 tsp salt
1 tsp pepper

Directions:
Directions:
Take your roasted corn and scrape the kernels off as close to the cob as possible. Using a blender or food processor, place 3/4 of the kernels in, pulse until it is a creamed mixture. Set aside.

In a medium sauce pan melt the butter and cream cheese adding the heavy cream, sugar, salt and pepper. Set aside.

Place the creamed corn into a crock pot and add the creamed corn as well. Once mixed pour in the cream cheese and butter mixture. Stir well until all incorporated. If it is to "soupy" add more corn. (Frozen works fine)

Cook on low for 1 to 2 hours stirring occasionally. Add more salt and pepper if needed.

This corn is fabulous when using roasted corn. I "stole" this recipe from a famous BBQ Restaurant named Rudy's. I have been told its pretty close to the original!
