Hot Artichoke Spinach Dip

2 frozen bags diced spinach (10 oz each), thawed and squeezed dry
1 package cream cheese, cubed
1 cup sour cream
1 can (14 oz) water-packed artichoke hearts, rinsed, drained, and chopped
1/4 tsp salt
1/8 tsp pepper
3/4 cup grated parmesan cheese
1 small onion, chopped
1/8 tsp crushed red pepper flakes
1/4 cup shredded cheddar cheese
Pita chips/bread

Directions:
Directions:
1) In large nonstick skillet, cook and stir onion until tender. Add spinach and cook over medium heat until heated through.
2) Reduce heat to low and stir in cream cheese and sour cream. Add artichoke hearts, parmesan cheese, salt, pepper and red pepper flakes. Cook for 1-2 minutes until heated through.
3) Transfer to 1-1/2 qt. microwave-safe dish and sprinkle with cheddar cheese. Cover and microwave on high for 2-3 minutes or until cheese is melted.
Serve warm with pita chips
