¾ pound fresh or frozen fish fillets
6 Tablespoons commercial sour cream (I substitute plain greek yogurt)
1 Tablespoon grated Parmesan cheese
½ teaspoon paprika
⅛ teaspoon dried tarragon leaves (I substitute fresh thyme or parsley)
¼ teaspoon salt
1 Tablespoon Italian-style seasoned fine dry bread crumbs
1 butter or margarine
Lemon wedges
Fresh parsley

Directions:
Directions:
Heat oven to 350º . Arrange fish fillets in ovenproof dish or broiler pan. Mix sour cream, parmesan cheese, paprika, tarragon and salt in a small bowl. Spread over fish. Sprinkle with bread crumbs and dot with butter.* Bake, uncovered, 15-20 minutes or until fish flakes easily. Sprinkle fish lightly with parsley. Serve with lemon.

*I butter the bread crumbs before putting on top of the fish and that works just fine.
