Mom's Coconut Cake Recipe

3 cups sifted flour
3 tsp double acting baking powder
1/2 tsp salt
3/4 cup butter
4 eggs - separated
1 `/4 cups milk
1/2 tsp of almond or vanilla extract

Fresh Coconut Sauce

1/3 to 1/2 cup coconut water
1/2 cup sugar 1 tsp lemon juice
1 tsp almond or vanilla extract

Sift together flour, baking powder, & salt, set aside

Cream butter & gradually add egg yolks, beating well after each one.

In small bowl combine milk & extracts.

Add to cream mix alternately with dry mixture beginning & ending with dry mixture.Blend thoroughly after each addition

In separate mixing bowl, beat egg whites until stiff but not dry. Fold gently into batter.

Turn into 2 - 9" well greased & floured (on bottom only) round cake pans & bake at 375º for 30-35 minutes

Crack open a fresh coconut saving the water inside.& shredding the meat. Set aside

Prepare sauce by mixing ingredients & simmer for 20 minutes.

Cool cakes in pans for 10 minutes. Pour sauce over top of cakes until all is absorbed then carefully turn out onto wire rack or on decorative plate.

Frost with fluffy marshmellow frosting & sprinkle with fresh coconut in between layers & on top.
