3 cups sugar
3/4 cups margarine, softened
1 1/3 cups frozen egg substitute, thawed OR 8 egg whites
1 1/2 cup low fat sour cream
1 tsp baking soda
4 1/2 cups sifted cake flour
1/4 tsp salt
2 tsp vanilla extract
Vegetable cooking spray

Directions:
Cream sugar & margarine at medium speed of an electric mixer until combined. Gradually add egg substitute OR egg whites, one at a time, beating well.

Combine sour cream & baking soda, stir well & set aside.

Combine flour & salt, with mixer running on slow speed, add to creamed mixture alternately with sour cream mixture, beginning & ending with flour mixture.

Stir in vanilla. Spoon batter into 10 " tube pan coated with cooking spray.

Bake at 325º for one hour, 35 minutes or until wooden pick comes out clean. Cool in pan for 10 minutes, then remove from pan.

Lemon - add 1 tsp grated lemon rind
Coconut - add 1 tsp cocoanut flavoring & decrease vanilla to 1 tsp
Almond - add 1 tsp almond extract & decrease vanilla to 1 tsp
Butter Rum - add 1 tsp each of butter & rum flavoring & decrease vanilla to 1 tsp
Butter - add 1 tsp butter flavoring & decrease vanilla to 1 tsp
