2 Tbsp. vegetable oil
1 cup finely chopped onion
2 Tbsp. finely chopped shallots
1 Tbsp. finely chopped hot pepper
1 cup flour
1 tsp. baking powder
1/2 tsp. salt
1 large egg, lightly beaten
1 Tbsp. melted butter
3/4 cup milk
1/2 pound of cod fish, cooked and flaked

1). Heat oil in a heavy, deep skillet over medium heat. Add onion, shallots and hot pepper and sauté until just softened . Remove from pan and set aside.
2). Sift together flour, baking powder and salt in a medium bowl. Make a well in the center and pour in egg, melted butter and milk. Mix lightly. Add softened onion, shallots. cod and hot pepper. Stir
3). Drop 2 to 3 Tbsp. of batter into hot oil in a skillet, being careful not to crowd cake in the pan. Fry 3-4 minutes each side or until golden.
4). Remove from pan and set on paper towel to drain. Serve piping hot.
