3 pounds sweet potatoes(about 5 large)
1/2 cup butter, divided
1/4 cup plus 2 TB packed brown sugar, divided
2 eggs
2/3 cup orange juice
2 tsp ground cinnamon, divided
1/2 tsp salt
1/4 tsp ground nutmeg
1/3 cup flour
1/4 cup uncooked old fashioned oats
1/3 cup chopped walnuts or pecans

1. Bake potaoes until tender in 350º preheated oven (about an hour) or prick several times & microwave on high for 16 to 18 minutes turning halfway through. Let stand 5 minutes
2. While potaoes are hot, cut lengthwise in half & scrape hot pulp from skins into large bowl
3. Beat 1/4 cup butter & 2 TB sugar into potatoes with electric mixer at medium speed until butter is melted. Beat in eggs, OJ, 1 1/2 tsp cinnamon, salt,& nutmeg
4. Beat until smooth then pour into a 1 1/2 qt baking dish. Smooth top
5. Make topping by combining flour, oats, remaining sugar & remaining cinnamon in s small bowl. Cut in butter with pastry cutter until mixture resembles coarse bread crumbs. Stir in nuts. Sprinkle over potato mixture

***at this point, this dish may be covered & refrigeratedup to 1 day. Bring up to room temp before baking ***

Bake 25 to 30 minutes until heated through. If you want crisper topping, broil 5 inches from heat 2 to 3 minutes until golden brown
