1½tsp Salt
1tsp Baking Powder
1½c Light Bodied Lager (NA substitution: plain seltzer water)
2lbs Skinless filet of Cod (substitution: Halibut or Haddock)
Yukon Gold Potatoes
Salt and pepper for seasoning
8c Peanut Oil for Frying
High temp thermometer
Tartar sauce, lemons and catsup for serving

This fish and chips recipe from Cooks Country is super easy and so delicious. Steps include frying the fries in 2 stages to ensure they are still hot when served.

In a large bowl whisk flour, corn starch and baking powder together. Once combined, add in lager and whisk until smooth. Cover with plastic wrap and set aside.

Cut fish into 8 4oz pieces. Pat dry and season both sides with salt and pepper. Cover with plastic wrap and place both the batter and the fish in the fridge.

Take potatoes and flatten all sides by cutting ¼ inch piece off each side, top and bottom. Place the first potato on its end and cut it into ¼ inch slices, then stack 2 slices on top of each other and cut into ¼ inch "fries". Repeat the process until all potatoes are cut. Do not soak the fries in water, the starches will help the fries become the right balance of crispy and tender.

Pour oil into large pot or dutch oven. Place potatoes into cold oil and turn heat on high. Bring oil and potatoes to an active rolling boil, this should take about 7 minutes. Cook at that same active boil for another 15 minutes. After 15 minutes, potatoes will be a little limp and beginning to turn golden brown. Using tongs, gently stir fries around and unstick any fries from the bottom of the pot. Continue cooking for another 4 minutes until golden brown. Using a spider or slotted spoon, remove fries from the oil and place on a paper towel covered baking sheet and set them aside. Scoop out any large remnants from the oil.

Remove batter and fish from the fridge. Place all pieces of fish into the batter and make sure they get completely dunked or covered. Bring oil to 375º. Using a fork, one at a time pull fish from batter and carefully drag and drop into the oil. Cook fish in two batches to prevent crowding and the cooked fish from sticking together. Monitor oil temperature to ensure it stays between 350º - 375º. Cook fish for 4 minutes on each side, 8 minutes total. Once cooked, remove from the oil and place on a cooling rack set over a baking sheet. Season with salt and repeat until all fish is cooked.

Once all your fish pieces are cooked, reheat the fries by bringing the oil temp back up to 375º, gently dropping them back into the oil and fry for just 1 minute. Remove from oil and salt immediately, plate and serve!
