½ - 8oz package cream cheese, softened
¼ cup sugar
1 egg

Batter:
1 cup canned solid pack pumpkin
1 cup sugar
1 egg
⅓ cup vegetable oil
1 cup all purpose flour
1 tsp cinnamon
1 tsp baking powder
½ tsp baking soda
½ tsp salt
¼ tsp ground nutmeg
¼ tsp ground ginger

1. Lightly spray a 9 inch by 13 inch baking dish with vegetable oil.
2. For filling, whisk cream cheese, sugar and egg in a small bowl until smooth and well blended.
3. For batter, combine pumpkin, sugar, egg and oil in a medium bowl Mix well. Stir in flour, cinnamon, baking powder, baking soda, salt, nutmeg and ginger.
4. Pour batter into prepared baking dish. Drizzle cream cheese filling over batter. Cut through batter with a knife several times for a marbled effect.
5. Bake at 375ºF for 25 to 30 minutes or until toothpick inserted in centre comes out clean.
6. Cool, then cut into 18 squares.

I almost always bake a double recipe. That uses a full package of cream cheese and a 2 cup jar of pumpkin. You will need a larger baking dish, and a bit more baking time. If that makes too many squares to be eaten before going stale, the excess can be frozen.
