14oz Savoiardi Lady Fingers or Pavesini (you need enough cookies to cover the pan twice)
24oz Marscapone
9 large eggs
27 T Sugar (3 T in whites, 1.5 cups to marscapone)
Strong Coffee

Directions:
Directions:
Separate eggs (yolks and whites) into two bowls
Add 1.5 cups sugar to yolks and beat thoroughly
Add (softened) Marscapone to mixture and beat thoroughly
(Can beat in separate bowl to make soft before adding)

Add 3 T sugar to whites and beat until stiff peaks form
(don’t add ahead of time, add right before you are going to beat)

Beat yolks and whites together thoroughly to make “cream”

Spread thin layer of cream on bottom of pan
Dip ½ of the total cookies in coffee on both sides quickly and place in pan
(it’s easiest to have lukewarm coffee in a bowl and flip quickly with your fingers)
Cover first layer of cookies in pan with ½ of the cream
Place second layer of dipped cookies on top, in the opposite direction
Cover with the rest of the cream
Sprinkle Cocoa on top
Cover & refrigerate over night
