1 lb chicken breast
3 T olive oil
2 T dijon mustard
"a little" chopped garlic
1/2 to 1 lemon - juiced
salt & pepper
bread crumbs

Directions:
Directions:
Combine olive oil, dijon mustard, chopped garlic, lemon juice, salt & pepper.

Coat both sides of chicken breast in mustard mixture, dredge in bread crumbs, fry in olive oil.

To make ahead: fry 7 minutes per side, place on cookie sheet, foil at room temperature, warm 350º 10 to 12 minutes.
