6.2 oz long grain rice
½ cup butter, softened
1 small chopped onion
¼ cup all purpose flour
1½ cups chicken broth
3 cups chopped cooked chicken
1½ cups half and half
6 oz sliced water chestnuts, drained
4.5 oz sliced mushrooms, drained
1 Tbsp parsley
1 tsp salt
½ tsp pepper
1 pkg sliced almonds

Directions:
Directions:
Preheat oven to 350º
Cook rice according to package directions, set aside.
Melt butter, saute onion. Add flour and cook, stirring constantly for 1 minute. Add chicken broth and cook, stirring constantly for 1 to 2 minutes.
Stir in next 6 ingredients, rice and chicken. Spoon into a lightly greased baking dish. Top with almonds.
Bake for 15 to 20 minutes
