4 large eggs
1 1/4 cup sugar
1/2 cup flour
1/2 tsp. fresh grated lemon peel
1/2 cup fresh squeezed lemon juice
1 (9 inch prepared packaged or frozen deep dish pie crust
confectioners sugar, or whipped cream (optional)

Directions:
Heat oven to 350ºF. In large mixing bowl, with electric mixer (high speed), beat eggs and sugar until thick and creamy. Add flour, baking powder, lemon peel, lemon juice, and 1/4 cup water. Beat until well blended. Pour mixture into prepared crust. Bake 45 minutes until set and top is dark brown. Remove pie from oven; cool completely, chill for 2 hours. Before serving, sprinkle top decoratively with confectioners sugar or whipped topping. Makes 8 servings.
