1 T. Vegetable oil
1 medium onion diced
2 tsp. Grated fresh ginger, or 1/4 - 1/2 tsp ground
1 fresh serrano chili, minced
1 T. Garam marsala
1 T. Tomato paste
1/2 tsp salt or to taste
1 -28 oz. can crushed tomatoes
1- 29 oz can drained chickpeas
1/2 c. Heavy cream
1/4 c. Chopped fresh cilantro leaves
Cooked rice

Directions:
Directions:
Heat oil over medium heat and add onions, cook until softened, about 5 minutes. Add ginger,serrano chili, garam marsala, and tomato paste, cook 1 more minute. Add salt, crushed tomatoes and chickpeas. Bring to a simmer and cook covered for 15 minutes. Stir in cream and optional cilantro and serve immediately. Refrigerate leftovers. I serve over cooked rice.
