2 - 16 oz Store Bought Pizza Dough
EVOO
3 Large Onions. sliced
All-Purpose flour
1 - 8oz container Mascarpona Cheese
1 C Crumbled Blue Cheese
Kosher salt
Fresh ground black pepper
1 C Toasted Walnuts
1 C firm California Red Grapes, slit down middle
2 TBS Flat-leaf parsley
2 C Arugula
1 fresh lemon

Parchment paper to line baking sheet.

1. Remove pizza dough from the refrigerator 1-hour before ready to start.

2. In a large saute pan over medium-low heat add 2 TBS oil and add onions. Add onions and slowly caramelize until brown and creamy about 20-mins.

3. Preheat oven to 500F

4. Heat the grill over medium-high heat and wipe down with oiled paper towels to create a non-stick surface.

5. On a lightly floured surface, roll out each pizza dough into an elongated shape, about 12 x 8-inches and about 1/2-inch thick. Brush with EVOO and grill on both sides until warmed through and grill marked, about 4-mins per side. Transfer to a baking sheet lined with parchment paper.

6. In a medium bowl, mix together the mascarone and blue cheese. Smear the cheese mixture over each grilled pizza. Place in oven for 2 - 3 mins until the cheese melts. Remove from oven and transfer to cutting board. Put arugula in a bowl, dress with a little EVOO, squeeze of fresh lemon, salt & pepper.

7. Top with caramelized onions, toasted walnuts, fresh grapes and arugula. If desired or needed, drizzle a little more EVOO over top.

This is a WONDERFUL flatbread that may be served as a light lunch or, 1st course. NOTE: An addition of thinly sliced Prosciutto would work well!
