1 Pkge sausage cut diagonally
2 garlic cloves
1/4 c. olive oil
1 large red pepper. sliced thin
1 medium onion, sliced thin
1/2 c. chicken broth or water
1/2 c. tomato sauce
2 c. cooked instant rice
1/2 c. mozzarella cheese

Directions:
Directions:
1. Heat oil and garlic in skillet, stir in sausage and cook until brown.
2. Add pepper, onion, broth and tomato juice and simmer for 10 minutes until the vegetables are tender and the liquid is absorbed.
3.Meantime, prepare the rice.
4.Stir rice into the skillet and sprinkle with cheese
