½ cup granulated sugar
4 egg yolks
1 Tbsp corn starch
1 ½ cups milk
1 tsp vanilla

Directions:
Directions:
1. Whisk sugar with yolks in a large bowl until pale and fluffy, about 1 minute. Whisk in cornstarch until combined.
2. Heat milk in a medium saucepan over medium-high heat until it starts to simmer. Slowly pour milk into egg mixture, whisking constantly until combined.
3. Pour mixture back into saucepan and set over medium low heat. Continue cooking, using a wooden spoon to stir constantly, until mixture has thickened and coats back of spoon, about 8 to 10 minutes. strain through a fine mesh sieve. Stir in vanilla. Place a piece of plastic wrap on surface and refrigerate until cold, about 1 hour.
