1 1/2 lb. Ground Beef
1 2" bell pepper strip
1/4 small onion
1 10 oz. package mild cheddar cheese, grated
1 8 oz. can tomato sauce
10 small corn tortillas
salt, pepper, garlic, comino, chili peppers to taste.
Directions:

Preheat oven to 350º
Dice onion and bell pepper. Saute in 1 Tbl. butter or oil.
Add meat and seasonings and cook until almost brown.
Add tomato sauce and simmer about 3 minutes.
Grease bottom and sides of 9in.X 7in. casserole dish.
Tear tortillas in quarters and line bottom of dish. Alternate layers of cheese, meat and tortillas, ending with cheese.
Bake for approximately 10 min. or until cheese is melted.
