1 3-4 pound whole chicken (skin removed)
water to just cover chicken
5 chicken bouillon cubes
3 cups celery, chopped
1 large onion, chopped
salt, pepper and dried parsley flakes to taste

2 regular size cans chicken broth
1 regular size can cream of chicken soup
3 cups thickly sliced carrots
2 cups noodles ( or more if you like thicker soup)
1 small package frozen peas (optional- I like it for color)

Directions:
Remove skin from chicken, rinse and place in a soup/large roaster pan and cover approximately 3/4 way with water. Add celery, onion and bouillon cube. Place on Med/high heat until chicken is done- until juices run clear. Remove chicken from pan and remove meat from carcass, cut up and return to stock in pan- do NOT remove celery and onions. Add seasonings to taste.

To chick and stock, add additional canned chicken broth and cream of chicken soup. Mix well. Add carrots and cook until crunchy soft, add noodles. cook until ala dente. If using peas add for about 2 minutes until cooked.

If soup is too thick you can add another can of chicken broth. You can also add additional fresh vegetables to taste.

This soup also freezes well.
