Cherry tomato sauce
2 - 3 cups cherry tomatoes
Salt and pepper
Fresh herbs your choice
Onion chopped fine
3 cloves garlic
1/2 cup olive oil
1 cup water
Basil leaves or pesto
On Stove top bring to boil and simmer until some of liquid is reduced

8 ounces fresh linguine
8 cups cubed vegetables (i.e. eggplant,red peppers, zucchini, sweet potato, onion, etc.)
2 - 3 cups cherry tomato sauce
12 cloves garlic whole, skin-on
1/4 cup olive oil divided
salt and pepper to taste
1/4 cup grated parmesan
1/4 cup fresh parsley minced
chili flakes optional
